I love chia seeds as they are so high in protein, and fibre and they fill you up for longer which keeps the dreaded sugary snacking at bay!
I found loads of lovely recipes on Pinterest for chia pudding and decided to give it a go! This is the mixture I used….
1 cup of almond milk
3 tbsps chia seeds
1 cup of fresh strawberries chopped
A handful of blueberries
1tsp vanilla extract (optional)
Add 3 tablespoons of chia seeds to 1 cup of almond milk-stir in the honey and vanilla extract and chill the mixture for about 4 hours or overnight in the fridge. When it is ready I added in a little pureed fresh strawberry to flavour the chia and almond mixture.
If you don’t like almonds, I think coconut milk would also work great in this recipe:)
Top with the remaining chopped fresh fruit to serve. This is perfect to use for a quick breakfast on the go or as a healthy pudding option after a main meal:)
